Our Story

Everyone wants to know how did you end up in Anguilla. So this is our story. David & I (Kim) Coburn were working on St. Croix in the U.S.V.I., prior to moving to Anguilla in March of 1992.

We met in college at Johnson & Wales University in Providence, R.I. David went to be a chef (Food Service Management) and I went for business (Travel & Tourism Management). After college, we worked in various hotels in western Mass., Savannah, Georgia, and then St. Croix.

When we first came to Anguilla David was the executive sous chef at Cap Juluca Resort. We had our daughter, Megan, in October of 1994 and bought into Mango’s as a partnership in June of 1995. We were approx. one week from reopening when Hurricane Louis (CAT 5) hit in September 1995 and demolished the entire building (wooden structure). Luckily for us, our landlord was a builder and we were back open in January 1996. Mango’s has seen several hurricanes over the past 27 years.

Our son, Cody, was born in March of 1997 and then Hurricane Lenny (CAT 5) hit in November of 1999. Hurricanes rarely hit that late in the season but it showed us that it can happen. In late 2008/09 we had the stock markets decline and in April of 2009, our business partner of the past 14 years passed away. This was an unexpected very stressful time for us as a family. David decided that he was ready to come out of the kitchen and turned over the title of chef to Darien Baptiste. A young local man that he had been training in the kitchen for many years. We were now the sole owners of Mango’s.

In Sept. 2017 Hurricane Irma (CAT 5) hit and Mango’s once again sustained major damage. We were closed for over a year and upon completion of the renovations were able to reopen in mid-November 2018. In March 2020, the island went into lockdown due to the coronavirus and we were closed again until December of 2020.

Our journey has had its ups and downs but we are still here. The restaurant has evolved over the years with physical changes in the furniture/building, etc., but the one thing that you can always count on is the outstanding and dedicated, loyal staff. We are grateful for each and every one of them. Some have been with Mango’s since its very beginning. We are actually the third owners of Mango’s. So Mango’s has been around for over 30 years. We have all had the pleasure to meet and make friends with many tourists/patrons over the years and look forward to seeing you in Anguilla!

Our Mission

Our desire has always been to be the restaurant that delivers the freshest local seafood in the island’s most beautiful and relaxed beach setting. We guarantee that all of the fish/lobster on our menu is locally caught and that it is prepared with the freshest local seasonal ingredients whenever possible.

We take special care to ensure that it comes from the sea to your table prepared in a simple, unpretentious way. We are very particular about the products we use because we believe that when you taste the food at Mango’s you will see the difference. Our menu does not change but our daily specials do. We have a loyal following of repeat guests that keep coming back for their special favorite dish whether it is the Sesame Snapper, the Spicy Whole Snapper, or the Five Pepper Crusted Steak served over a Green Peppercorn Sauce. Our consistency is what drives our business.
